"Chicken Breast Saltimboca on a Bread Stick"


  • Chicken breast fillet, 8 cm long, 2 cm wide, approx. 3 mm thinly beaten
  • bacon 10 cm long, as thick as the breast fillet
  • Sage or basil pesto
  • Thin bread sticks
  • Oil for frying
  • Beetroot strips or tomato cubes for a garnish

Break the bread sticks into approx. 5 cm long pieces. Lay out the bacon and brush the chicken breast with the pesto, place the chicken on the bacon and wrap around the bread stick. Pan fry the outside of the wrap and cook in a microwave on half power
Perfect finger food that will melt in your mouth!

  • Basil pesto
  • Basil leaves to taste
  • Garlic, finely chopped
  • Pine nuts
  • Grated Parmesan
  • Best Olive oil

Blend the ingredients in a blender to make a not too finely mixed, rather dryer pesto genovese.
If you prefer, use sage leaves and parsley instead of basil leaves.
